Shavano was excellent. The laidback atmosphere with excellent customer service was a lovely dinner spot. The owner was so kind walking around checking in on the patrons. Everything was delicious. Will be back again.

Absolutely phenomenal dining experience at Shavano.. so good I went twice in one weekend while visiting Salida! As a self-proclaimed steak fiend, I have to say..the ribeye might just be the best steak I’ve ever had. Perfectly cooked, beautifully seasoned..it was just done right. The accompanying potatoes were a perfect match, and the spring salad was light and refreshing, balancing the richness of the steak. On my second visit, I switched things up and had the chicken with the winter quinoa salad..also delicious! And I have to mention the pot de crème… absolutely divine. Rich, smooth, and the perfect way to end the meal. Beyond the food, the atmosphere and service were impeccable. I sat at the bar on my first visit and was chatting happily with other guests within minutes. Same thing happened the second time..it’s that kind of place. The community vibe is strong, and the staff are warm, attentive, and clearly passionate. All in all, an A+ experience. Wonderful food, great people, and a place that makes you feel right at home. I can’t wait to go back!

The best overall dining experience in the Arkansas Valley, no question. While the food and drink is top tier/special occasion worthy, the simple, clean ambience, fun energy and super friendly staff keep it accessible to anyone who might wander in. The wine list is the best in town and I think the only (or one of the only) glasses of biodynamic/natural wines you can get in town. Food is made to share—we ordered one main and tons of sides and it was a perfect way to eat a variety of the incredible menu. Everything was priced so reasonably. Salida has been waiting for a place like this and I can’t express how happy I am that Shavano opened!! I’ve already been twice. : )

Foodie delight! As we walked in I saw the trout and kebabs on a guest’s table and decided to have the trout for dinner! Sorry no pics. We were hungry and enjoying the moment. Service is great, food is top notch, great wine list and they offer a nice selection of beers, two cocktails (no liquor license), reasonably priced quality food.

Sooo, this is a GREAT find in Salida! Robbie and crew provide a wonderful experience. The ribeye was "fire," the bean stew was legit, and the beat salad was rooty delicious. The wine selection had a lot to offer, and the staff made it a great night. Was even able to take some home to have for breakfast the next day before pounding out some gravel miles. Treat yourself. You're worth it!

We found this restaurant on a recent trip to Salida, CO. We were there on their 1st week serving Breakfast. What a wonderful surprise to our taste buds. The pleasant atmosphere and service added to our find. The frittata was perfect. Best coffee I have had in months at a restaurant. I looked at their dinner menu and wine list and will return to partake of the broad selection of Mediterranean meals. I highly recommend you take sometime to eat at this wonderful place.

One of the best meals I’ve had in 2025 and my new favorite restaurant in Colorado. The food was fresh, flavors rich and well paired, and the portion sizes generous! I will be dreaming about this meal for a while!

My husband and I had a wonderful meal with exceptional service last night. The mushroom farro risotto was a 10 and we'll absolutely get it again. We also had the summer squash salad, the beet salad, the beef kabob, and the corn cake desert. All were fabulous and I wish I knew our server's name because he was also completely on his game. Thanks for the quality, we appreciate it, and we know what it takes to pull something like this off. Well done.
